If your plums are naturally sweet, you can skip the added maple syrup or honey.
Ingredients
150 g (⅔ cup) plain Greek yogurt
2 medium ripe plums, pitted and sliced into wedges
1 tsp maple syrup or honey
1 tsp butter or coconut oil
¼ cup (30 g) granola
1 tbsp smooth or crunchy peanut butter
¼ tsp cinnamon powder (optional)
Method
Wash the plums, remove their pits, and cut them into wedges.
Heat butter or coconut oil in a non-stick pan over medium heat. Add the plum wedges and cook for 2 minutes until they begin to soften.
Drizzle in the maple syrup or honey and sprinkle with cinnamon, if using. Gently toss the plums and cook for another 3–4 minutes until tender, glossy, and lightly caramelized.
Take a spoon of Greek yogurt into a serving bowl.
Arrange the warm plums over the yogurt. Scatter granola and drizzle the peanut butter over the top.
